It's National Pie Week! the perfect excuse to indulge in a slice of homemade goodness! What better way to celebrate than with this Classic Vanilla Custard Pie? Rich, creamy and infused with the delicate sweetness of Dr. Oetker Vanilla Sugar (Zahar Vanilat), this pie is a true crowd-pleaser. Whether you're enjoying it with a cup of tea or serving it as a comforting dessert, it's the perfect treat for this special week dedicated to all things pie!
Prepare the Pastry: In a bowl, rub the butter into the flour until it resembles breadcrumbs. Stir in the icing sugar, then add the egg yolk and water. Mix until the dough comes together. Wrap in cling film and chill for 30 minutes.
Blind Bake the Pastry: Preheat the oven to 180°C (fan 160°C/gas mark 4). Roll out the pastry on a floured surface and line a 20 cm tart tin. Prick the base with a fork, line with baking paper and fill with baking beans. Bake for 15 minutes, remove the paper and beans, then bake for another 10 minutes until golden. Set aside to cool.
Make the Custard: Heat the milk and Dr. Oetker Vanilla Sugar in a saucepan until just steaming. In a bowl, whisk the egg yolks, cornflour and caster sugar. Gradually pour the warm milk over the egg mixture, whisking constantly. Return to the saucepan and cook over low heat, stirring, until thickened.
Assemble the Pie: Pour the custard into the cooled pastry case. Smooth the top and leave to cool to room temperature. Once cooled, refrigerate for at least 2 hours.
Serve: Slice and enjoy as is, or dust with extra Dr. Oetker Vanilla Sugar for a delicate finish.
