Authentic Thai Green Curry with Mae Ploy Green Curry Paste

Bring the taste of Thailand to your kitchen with this Authentic Thai Green Curry, made using Mae Ploy Green Curry Paste 400G. Bursting with bold, aromatic flavours and creamy coconut richness, this dish is perfect for a comforting yet vibrant meal.

Ingredients:

For the curry:

  • 2 tbsp Mae Ploy Green Curry Paste 400G
  • 400ml coconut milk
  • 2 boneless chicken breasts, sliced (or tofu for a vegetarian option)
  • 1 tbsp vegetable oil
  • 1 red pepper, sliced
  • 100g green beans, trimmed
  • 4 kaffir lime leaves, torn
  • 1 tbsp fish sauce (or soy sauce for a vegetarian option)
  • 1 tsp sugar
  • Juice of ½ lime
  • 1 handful fresh Thai basil or coriander

For serving:

  • Steamed jasmine rice
  • Lime wedges

Method:

  1. Prepare the Curry Base: Heat the vegetable oil in a pan over medium heat. Add Mae Ploy Green Curry Paste and cook for 1–2 minutes until fragrant.
  2. Cook the Chicken: Add the sliced chicken (or tofu) and stir-fry for 2–3 minutes until lightly browned.
  3. Add the Vegetables: Pour in the coconut milk and add the red pepper, green beans and kaffir lime leaves. Stir well.
  4. Simmer: Add the fish sauce, sugar and lime juice. Simmer for 10–15 minutes until the chicken is fully cooked and the sauce has thickened.
  5. Finish & Serve: Stir in Thai basil or coriander just before serving. Serve hot with steamed jasmine rice and a wedge of lime.
